Frog Spawn Pudding
Ingredients
1 cup (226.8 g) seed tapioca (sago)5 cups (1.18 L) water
½ cup (113.4 g) sugar
1 Tbsp butter
1 Tbsp golden syrup
Grated rind and juice of 1 lemon

Total cooking time 20 to 30 minutes, plus chilling time.Instructions
In a large saucepan, combine tapioca and water and bring to a boil.Reduce to low heat and cook until the grains swell and become transparent, stirring occasionally to prevent sticking.
With a wooden spoon, stir in the sugar until dissolved.
Mix in the butter, golden syrup, lemon juice and rind.
Pour the mixture into individual serving bowls and allow to cool before chilling to set.
Serve with cream or ice cream.
